David Joachim’s book is the most complete list of substitutions I’ve ever seen — he goes far, far beyond the “flour, sugar, eggs” list you usually find at the back of a cookbook. He also has copious charts of rices, beans, chiles, potatoes, etc. with characteristics and substitutes for each. This isn’t the kind of food book you’d sit back and read from cover to cover, but it sure will come in handy in substitution emergencies!
