Culinary sleuth Shirley Corriher used to write my favorite column in Fine Cooking magazine: the “Food Science” column. She made kitchen mysteries make sense — Nancy Drew couldn’t come close to unveiling the phenomena that Shirley explained in every issue! CookWise is the culmination of those “mystery-solved!” moments. If you really want to understand why your cake fell or exactly what happens when you sear a steak, read this book. It’s rather like a culinary Chilton manual…except that each step/reasoning is explained in full so that cooks can bake, fry, and mix with confidence. (Unlike a line I once saw in a Chilton that said “Step One: Remove dashboard.” Not so helpful…) CookWise can get heavy in parts — lots of technical detail — but it’s worth reading sections more than once to be able to make soufflés with impunity.
