Time and time again, I find myself reaching for a Mediterranean-inspired recipe. Maybe it’s the fragrant combinations of garlic and lemon…or the rich yogurts and cheeses…or the spicy peppers and earthy lentils…there’s just something about the food traditions of that region of the world that appeals to me. Two of my favorite three cuisines—Lebanese, Moroccan and Ethiopian—are firmly rooted in the Mediterranean soil; even though the latter is a bit removed geographically, Ethiopian cuisine, too, shares certain elements of flavor and preparation with its northern neighbors. If you enjoy a pungent plate of tabbouli or falafel topped with smooth tahini sauce, you’ll be sure to enjoy what you’ll find in these pages.
