Who would have thought that two ingredients could be so heavenly? Maybe it’s because dates and coconuts are both fruits of palm trees. This dessert takes about 30 seconds to prepare and is the perfect blend of sweet and chewy. Just rinse the dates, dip them in egg whites, and roll them in unsweetened coconut flakes. (The dates have enough sweetness to go around!)
Be sure to use good-quality eggs: at minimum organic, preferably pastured. Responsible chicken farmers maintain healthy flocks by letting them roam outside and eat what they’ve evolved to eat rather than restricting them to interior battery cages and feeding them an industrial sludge consisting mostly of corn and soybeans. Pasturing chickens results in healthy, non-medicated hens and clean eggs. If you would rather skip the raw egg white, you could create a similar sticky solution by mixing 1 T. of ground flaxseed with 3 T. of water. (Note: this amount acts as an egg substitute when you’re baking–just use one batch for every egg the recipe calls for.) Another idea would be to dip the dates in the coconut flakes as you eat them.
