I can’t remember where I got this, but my little “Kitchen Equivalent Chart” of measures and amounts is one of the most valuable things in my kitchen.  It is magneted front-and-center on my fridge for easy reference.  If you want to reduce or increase a recipe, you need to know how to split measurements–for example, half a tablespoon is not a common measuring spoon.   Some of these measurements are also useful when following cocktail recipes.

You might want to print this chart out for your own reference:

a pinch = 1/8 tsp. or less

3 tsp. = 1 tbsp.

2 tbsp. = 1/8 cup

4 tbsp. = 1/4 cup

16 tbsp. = 1 cup

5 tbsp. + 1 tsp. = 1/3 cup

4 oz. = 1/2 cup

8 oz. = 1 cup

16 oz. = 1 lb.

1 cup of liquid = 1/2 pint

2 cups = 1 pint

2 pints = 1 quart

4 cups of liquid = 1 quart

4 quarts = 1 gallon

8 quarts = 1 peck (apples, pears, etc.)

1 jigger = 1 1/2 fluid oz.

1 jigger = 3 tbsp.
