This makes a very refreshing smoothie when mangoes are in season. When choosing your mango, make sure you get one that is soft but not squishy (avoid ones with indentations and browning–that indicates bruising) and do the sniff test: a ripe mango should have a strong fragrance. Also look for one with a trail of liquid coming from the stem–that’s another sign of ripeness.
Ingredients
1 ripe mango, sans the skin and cut into chunks (doesn’t have to be elegant–you’re going to be blending it)
1 cup unflavored rice milk (or more, depending on how thin or thick you want your shake to be)
Place in blender and blend on high speed to make the shake extra-frothy.
